Carlo Riallo

Owner and Chef Executive of Italia Mia, was born in 1980 in Naples, Italy. Carlo has been working in the restaurant industry for more than 25 years as a Pizzaiolo and Chef. Before immigrating to Canada in 2011, Carlo and his father owned a pizzeria-restaurant in the town of Tortora, Calabria, Italy. Over the past ten years, Carlo has worked for various Italian restaurants in Edmonton with great motivation. In the past years, he has been a Master Pizzaiolo of the school of Pizza-Chef in Toronto where he oversaw the sales and training of equipment for pizza restaurants of across North America.

Styles: The style of pizza that I extensively use are the Neapolitan pizza, New York pizza style, pizza classica, pizza in teglia, pizza in pala, bread, fresh pasta and gluten free pizza (in 2017 I won the Best Pizza Chef Award presenting a gluten free pizza).

Qualifications: Over the past ten years I did consulting for brand new pizzerias in US and Canada. I carried out consultancy on different concepts of pizza such as electric or wood oven pizzas. 

Awards: I have attended competitions in Toronto and was awarded Canada Best Pizza Chef of the year in 2014, 2015 & 2017. I was also awarded for the Best Non-traditional Pizza in Las Vegas in 2014. I also attended from 2014 to 2019 at the pizza Expo in Las Vegas
