Mirko D'Agata
Born and raised in Turin, he started working in a Neapolitan pizzeria at the age of 16 as an
assistant pizza maker, after two years deciding to leave to go work around Europe. Back in Italy to take the reins of the "Passamaneria" pizzeria in the historic center of Turin. In 2010 he decided to move to the province of Cuneo, where he collaborated in the opening and launching of the Neapolitan pizzeria "Cinemà".
During the same period, he worked for the master baker and world baking champion Gianfranco Fagnola, where he learned the techniques of fermentation with sourdough. In 2012 he arrived in Canada to take the reins of the “Bottega” pizzeria, in 2014 he opened with the pastry chef Sandro Carpené the Italian bakery and pastry Arte & Farina. In 2016 begins his collaboration with the No 900 group as a cookery and pizzeria trainer.
